Real Life LOCAL Meals….On a Budget

If you have 30 minutes and $4 a plate you can feed your family a LOCAL, healthy meal.

10518833_588137771331905_8271699697555002450_nEat LOCAL, avoid processed foods, we all have heard it… most of us get it, but seriously that is hard to do. I am betting many of you are much like me. I have a full time job, a husband, a 21 year old that is in and out, pets, laundry, and cleaning … the list goes on and on. Still, I want to serve a meal I can snap a photo of and rave about on Facebook, better yet… I want one my husband will brag to his buddies about. Well I am here to tell you: it can be done, and done for less than a McDonald’s Happy Meal.

30 minutes that’s about my limit. Food has to be easy to get to the table but taste good when it gets there. I am not a chef and any recipe that has more than one page pretty much loses me.  I am going to keep it as simple as possible because, to be honest, that is the only way I will actually try this meal more than once.

 

SHOPPING LIST for 3 people…
1 ½ pounds of Chicken ……………………….. $7.78 Local Butcher Shop
4 ½ Cups of Spinach……………………………. $1.00 Local Produce stand
Cucumber……………………………………………. $0.50 Local Produce stand
1 16oz package of HUSK Sweet Corn………. $2.49 Marsh Supermarkets
Olive oil, seasoning salt, salt, and pepper… $11.77 / 3 = $3.92 a plate

STEPS:
Defrost Chicken and preheat oven to 475.
Empty frozen block of HUSK into a bowl and cover with warm water.
Brown Chicken on both sides with a bit of olive oil and seasoning salt, Cover and turn down to medium.
Drain HUSK sweet corn put in a gallon freezer bag drizzle with olive oil, salt and pepper and shake.
Spread on a foil lined cookie sheet bake for about 10 minutes, turning once to brown evenly.
Cut spinach, dice cucumber and serve with your favorite dressing.
